More fresh coffees! Bell’s will now be utilizing the same Agua Limpa that we’re featuring on our single origin menu - it’s extremely similar to the previous Brazil component, Sitio Anhumas, so the flavor profile of bell’s is nearly identical. The biggest news here is that Savio has a new washed Ethiopia component that’s making it taste cleaner and sweeter than ever. Though there’s been quite a few changes this Summer as we’ve tweaked our blending vision, we’re going to see the blends really take shape this Fall and become rooted with more consistent flavor profiles. Moving forward, you can expect the bell’s to always predominantly feature classic / comforting coffees from Latin America, and the Savio will highlight a new rotating cast and crew of coffees from East Africa.
Again, both are going to be very sweet and versatile, so they’ll work well for filter or espresso preparation. Just let your personal flavor preferences guide you here, and please reach out to us if you have any questions!
The blend components and compositions as of roast date September 8th, 2019 are as follows -
Lucita Linda (Guatemala / Washed) - Harvest Season: Early Spring 2019 - A new coffee for us as an interim component as we await our 2019 Los Santos selection (Coming very soon!). Finca Lucita Linda is located in the San Marcos region of Guatemala, very near the Mexico border. This medium (66 hectare) sized estate, owned by Eber Omar Reina Enriquez, is part of an ongoing project from Atlantic Specialty Coffee whereas they are selecting specific lots with high potential out of estates that would normally blend their production into a larger commercial crop.
Agua Limpa (Brazil / Natural) - Harvest Season: Summer 2018 - This coffee comes to us from our long time friends and oldest partnership to date, Fazenda Ambiental Fortaleza. In fact, the Agua Limpa Valley is located right next door to FAF. There are two key farms that combine to make this lot in the Mococa region of Brazil - Fazenda Moro Azul and Fazenda Santo Antonio. They have both been working extremely hard to improve both sustainability and quality on all levels of production.
Gore Kone (Ethiopia / Washed) - Harvest Season: Winter 2018/2019 - A new coffee for us this year from the Sidamo region, but sourced through a long time partnership with between Testi Coffee (exporter) and Trabocca (importer). We’re loving the soft stone fruit and deeply sweet flavor profile of this washed grade 2 lot. Keep an eye out later this year as we’ll also be featuring a grade 1 natural processed coffee on the single origin menu as well!
Don Francisco (Nicaragua / Washed) - Harvest Season: Spring 2019 - Sourced through Gold Mountain Coffee Growers, this is actually a single producer coffee from the farm of Don Francisco and his wife, Blanca Nieve. High in the mountains of Jinotega, the Bourbon and Caturra varieties grow particularly large and dense. Coupled with Gold Mountain’s extensive training on selective picking only the absolutely ripest red cherries, this coffee is incredibly sweet and full bodied.
bell’s - 60% Agua Limpa / 40% Lucita Linda
With Agua Limpa taking the lead, bell’s is absolutely remaining consistent in it’s trail mix flavor profile. This coffee is showcasing a deep brown sugar sweetness coupled with heavy chocolate and toffee flavors. The Lucita Linda adds a touch of complexity with a soft apple-like acidity. Overall, it’s tasting rich and sweet and highly drinkable. We taste: dark chocolate, brown sugar, vanilla, hazelnut, almond butter, nougat, toffee, red apple.
Savio - 67% Gora Kone / 33% Lucita Linda
This blend change marks a distinct push towards Savio beginning to lean more fruit forward. The biggest difference here is that you can expect a bit more complex flavors and acidity in comparison to the bell’s. Not so much brightness like citrus fruits, but more balanced and juicy like a ripe plum or peach. The Lucita Linda component keeps Savio super sweet and clean, adding layered flavors of brown sugar and chocolate. We taste: milk chocolate, brown spice, black tea, honey, lavender, golden raisin, honeycrisp apple, grape, plum.
Aldo’s - 100% Don Francisco
This coffee stands up to heat incredibly well in the roaster and allows us to roast it a bit longer/darker while still keeping a good amount of sweetness in the cup. Expect loads of dark chocolate, roasted nuts, dried dark fruit flavors (raisins, prunes, etc), and a super long aftertaste.
